<ul>
<li>1tbsp olive oil</li>
<li>1 knob butter</li>
<li>1 onion sliced</li>
<li>2 cloves garlic crushed</li>
<li>2 parsnips cubed</li>
<li>2 carrots cubed</li>
<li>1 potato cubed</li>
<li>1tbsp Madras Curry Powder</li>
<li>1/2 tsp Hot Chilli Powder</li>
<li>1 litre vegetable stock (I used 2 vegetable oxo cubes for this)</li>
<li>1tsp dried coriander</li>
<li>Seasoning</li>
</ul>
<ol>
<li>Heat the olive oil and knob of butter in a large saucepan</li>
<li>Add the onion and garlic and heat until softened (about 5-10 minutes)</li>
<li>Add the parsnips, carrots and potato, heat with the onion and garlic for a couple of minutes</li>
<li>Season with salt and pepper</li>
<li>Put Oxo cubes, curry powder and hot chilli powder in a jug and add 1 litre hot water</li>
<li>Add the curried stock to the vegetables in the pan</li>
<li>Add the dried coriander to the mixture</li>
<li>bring to the boil then simmer for 20 minutes</li>
<li>Whizz in a blender</li>
<li>Enjoy with a couple of slices of bread!</li>
